MEXICAN BBQ SIDES

When it comes to grilling, the attention tends to be on a few big hitters but the truth is that sides can make or break a BBQ. Take your summer dining to the next level with fantastic BBQ sides you can whip up in no time.

A salad is always a good bet for a last minute grill up, because it can easily be stored and served cold alongside the host's favourites. A pudding is also a great shout. Grilled pineapple is an incredibly simple delicacy, all you need is brown sugar and cinnamon. A tub of ice cream is often a winner too.

Most vegetables can be BBQ'd with a little prep, but there are some that really sing on the grill. Must haves include aubergines, peppers, onions, mushrooms (the bigger the better), avocado, courgettes and asparagus.

For a classic combo, why not make some BBQ'd chips to go alongside your fish? Sweet potatoes work particularly well, just chop to size then pop them on a tray on top of your BBQ. Or mix up a speedy bowl of cous cous with some chargrilled tomatoes and a squeeze of lime to top.

For a super speedy and tasty side, pop a tortilla on the BBQ and sprinkle with shredded cheddar and your favourite spice mix. Once the cheese starts to melt, fold it in half, flip then dish up alongside your chicken. Coleslaw is a classic and you can give it a marvellous Mexican twist by swapping out the mayo for a vinegar, olive oil, lime and coriander dressing.

A smoky pot of beans is a wonderful accompaniment to BBQ beef. Use a stainless steel pot to caramelise some onions with brown sugar before adding your beans for a fantastic flavour. Baked potatoes are also an excellent side. Start them off in the microwave if you're short on time then wrap in foil before placing over the coals. Serve with a scoop of sour cream and a sprinkling of red onions.
